Two weeks ago my Easter plans were pretty loose — mainly revolving around the couch, a cat on my lap and maybe some bubbly in my hand. But things can change quickly. My grandfather, who was six months from his 98th birthday, suddenly became very ill and passed away last Thursday. Now I rarely get overly personal in these posts and I certainly don’t intend this one to get weepy, but I will say it’s been a very difficult week.

Luckily, I live close enough to my grandparents that I visited them as often as I could. And so after I heard the news, I packed up a bag and headed north to see my family. Many family members had made the pilgrimage, first to visit with him, and then to help plan the memorial. This was how I ended up cooking Easter dinner for nine last Sunday.

It was actually the perfect way to spend the day. For me cooking is a peaceful endeavor and it was nice not only to have a distraction but also a sense of purpose. And being surrounded by family as everyone traded stories about my grandfather (and discussed how people get famous from YouTube videos) was undoubtedly the best place to be.

Losing people you love is always hard. It was especially devastating for me to say good bye to the man who taught me to play cribbage, made me learn to use the brakes on my bike (long story!) and walked me down the aisle on my wedding day. But we honor these people with stories, recalling their memories to help continue their legacies.

Adios Arborio: Steel Cut Oat Risotto Rocks my World

I love all things Italian. Set me down in front of a plate of meatballs in red sauce and I’m wholly satisfied. Plop a bowl of pasta in front of me and I am thrilled. Give me a plate full of creamy, cheesy risotto and I am over the moon.

But I try as much as possible to eat things that are, if not healthy, at least not totally terrible for me. Which means making and eating risotto is something I sadly don’t do as often as I wish I did.

Therefore any excuse to whip one up is blessing, which is why when I came across this recipe in an issue of Food & Wine, I couldn’t resist it. The steel oats have to make it healthy, right? Fewer calories, lots of whole grain goodness…and cheese and butter…yum!

Hello, Delicious! Swiss Chard, Tomato & Bread Gratin

Sometimes I get the feeling that food fate exists, as if there are just things we are destined to eat. Upon my first bite of this dish, I am even more confident in that belief. Why, you ask? Let me tell you a little story. I am a hoarder of recipes, a collector of torn pages from numerous food-related magazines which are then lovingly organized in one of ten different folders I keep by my couch. I like to go through them often, adding new recipes, reorganizing, maybe pulling out one or two to actually make over the weekend. It’s a sickness, I know. I grapple with that daily. And yet, I can’t stop.

Recently, in an effort to un-hoard, I have been trying to either throw out recipes I know (deep in my heart) that I will never make. Or, better yet, trying to resist tearing them out in the first place if I feel even the slightest bit “meh” about them.

And so as delicious as this Tomato and Swiss Chard Gratin sounded, I was hesitant. With all the wonderful carb-loaded things I eventually want to make, would this actually ever be at the top of the list? Will I pass this recipe by to try out yet another macaroni and cheese instead? Would I ever feel the need to buy a bunch of fairly expensive things: plump beefsteak tomatoes, five pounds of Swiss chard and a nice Gruyère cheese just to bake a fancy casserole? Its chances were not looking good.

Three different times, I almost threw the magazine out with that page still inside. But finally about three weeks ago, in a fit of optimism, I yanked it out. Instantly I was annoyed with myself for adding another stack of paper to the already massive pile of recipes waiting to be filed away in their respective folders.

(Oh god, I’m practically begging someone to plan an intervention for me.)

Anyways here’s the shocking news: within two weeks, I had made it! And in not-so-shocking news, it was freakin’ amazing. Like, so unbelievably good. Yes, this is the dish I referenced in my Cider Press post, the dish that was one of the best things I’ve ever eaten. The bread became almost like custard, the chard and onions added depth, the tomatoes kept it moist and the cheese was (of course) sublime.

I am already dying to make it again. In fact, I’m dreaming about this instead of stuffing to go with my turkey at Thanksgiving…or maybe with leftover turkey layered inside? The possibilities are endless.

Fresh Corn Chowder: A Soup to Soothe the Savage Cold

You know fall is coming when you catch your first cold of the season. I spent a good amount of time last week in a daze of Sudafed and cough syrup, wishing that I felt good enough to enjoy the last of the summer sunshine. Instead I spent every night curled up on my couch watching Season 3 of Drop Dead Diva and eating soup.

I probably deserved to get sick since it seems as though I spent all of September running around with barely any time to rest. First came WAG, followed by a weekend in Tacoma and then the next weekend was FEAST. And FEAST brought with it parties, after parties and after-hours after parties, where I ingested entirely too much free champagne. I got a picture with Fergus Henderson while partying at the top of the Wieden+Kennedy building, shook hands with Sean Brock around 2 am at Nostrana and stalked the hell out of April Bloomfield (though I was too shy to approach her).

And then I caught a serious cold. Even though I’m a little sad about that, I have to say two things:

  1. It was totally, absolutely worth it!
  2. The soups I made to aid my recovery were rockin’!

My favorite one was actually a recipe for White Cheddar Corn Chowder that I pulled from a 2007 issue of Martha Stewart Living. How I managed to wait five years before making this, I’ll never know but I can say I won’t be waiting another five before making it again!
